Was just talking about this with my wife and one of her friends who goes to this place. Check out the Salsa Heat Dance Studio, they have classes at six locations throughout Central Florida, including East Colonial, Maitland, Kissimmee, Deltona, Melbourne, and Clermont. There site is here: http://www.salsaorlando.com/ References :
Best place for Ballroom? Hands down the Longwood Ballroom owned by Rick Elliott. He totally rocks. It's not every day you can say you took a lesson from a former Blackpool champion.
Latin? Definitely Salsa Heat. From what I hear, they are pretty darn good. Doris used to be a student at the studio I used to work for (back in the day). She is SO nice.
Also, check out my class at the J Douglas Williams YMCA in Lake Mary. You can call 407-321-8944 for more details. This is the last week of this session, but we're starting up a new class the first week in May. Depending on what level you are at, it may or may not be a good fit for you.

Ballroom dancing is easy, but to latin dance, you need a latino/latina, cause basically you need to learn the rhythem and basic steps first. Ball room dancing (steps from the guy's view) right foot step back, left foot comes together with right, left foot moves to left, right meets left, left foot foward, right meets then right moves to right. This should make a square. After you get the basic steps, add in a slight rotation within the steps. References :

I don't know how far you are willing to travel, but there is a dance studio on highway 441 in Leesburg, about 40 miles north of Orlando
